Posh beans on toast

This beats tinned beans on toast any day. With the addition of salty bacon and sweet paprika, the flavours are amazing.

SERVES: 1 | COOK & PREP: 15 min

Ingredients

  • Half tin canallini beans

  • 1 tbsp tomato puree

  • 25g bacon lardons

  • Small handful of chopped parsley

  • 25ml boiling water

  • 1 tsp wochester sauce

  • 1 garlic clove chopped

  • 1/2 chicken stock cube

  • 1 tsp paprika

  • 2 pieces of brown bread, toasted

Method

  1. Put a frying pan over a medium to high heat, add the bacon and fry for 5 minutes.

  2. Add in the beans, garlic and tomato puree and cook for a further 2 minutes. Turn the heat down a little.

  3. Sprinkle in the paprika and crumble in the stock cube, then add the boiling water and Worcester sauce and stir together. Cook for 2 more minutes to combine together. Add a little more water if the sauce looks a little dry.

  4. Toast the bread and top with your homemade beans and chopped parsley.
