Broccoli, cauliflower & stilton soup

Creamy broccoli and cauliflower soup with rich blue cheese.

SERVES: 4 | PREP & COOK: 20 min

Ingredients

  • 300g broccoli, roughly chopped

  • 100g cauliflower, roughly chopped

  • 500ml chicken stock

  • 1 large onion diced

  • 70g blue cheese

  • 1 chicken stock cube

Method

  1. Place the diced onion in a large pan over a medium heat with 1 tbsp olive oil for 5 minutes.

  2. Add the broccoli with the stock cube and water and bring to the boil.

  3. Simmer for 10 minutes.

  4. Using a stick blender, blend the soup to a smooth puree. Alternatively put the soup in the food processor a whiz to a smooth paste.

  5. If you removed the soup from the pan place it back in to re heat for 5 minutes.

  6. Serve with wholegrain bread or a crusty roll.
