Broccoli, cauliflower & stilton soup
Creamy broccoli and cauliflower soup with rich blue cheese.

Ingredients
300g broccoli, roughly chopped
100g cauliflower, roughly chopped
500ml chicken stock
1 large onion diced
70g blue cheese
1 chicken stock cube
Method
Place the diced onion in a large pan over a medium heat with 1 tbsp olive oil for 5 minutes.
Add the broccoli with the stock cube and water and bring to the boil.
Simmer for 10 minutes.
Using a stick blender, blend the soup to a smooth puree. Alternatively put the soup in the food processor a whiz to a smooth paste.
If you removed the soup from the pan place it back in to re heat for 5 minutes.
Serve with wholegrain bread or a crusty roll.
