Peach & blue cheese rocket salad
A delicious quick salad packed with juicy peaches and creamy blue cheese.

Ingredients
70g blue cheese
200g Rocket
2 peaches, quartered, stone removed
Handful of walnuts
Balsamic glaze
Olive oil
Black pepper
Small handful of mint
Method
In a frying pan over a medium heat toast the walnuts and half the peach slices for 5 minutes until the nuts are golden and the peaches, charred.
Layer the rocket between two plates and scatter over the mint.
Toss the peaches, nuts and blue cheese in with the rocket.
Drizzle over the balsamic and olive oil and season with black pepper.
