White chocolate & ginger cheesecake

This no bake cheesecake is so easy and quick to make but tastes amazing! A real crowd pleaser.

SERVES: 8-10 | COOK & PREP: 20 min + 2 hours to set

Ingredients

  • 200g ginger biscuits

  • 70g butter

  • 250g cream cheese

  • 250g mascarpone

  • 200g white chocolate

  • 3 pieces of ginger in syrup (syrup drained), chopped into tiny pieces

Method

  1. Belt the butter in a medium size sauce pan over a low to medium heat.

  2. Blitz the biscuits in a food processor until they resemble fine crumbs.

  3. Add the biscuit crumbs to the butter and mix to combine.

  4. Press the biscuit mixture into a 9inch spring base tin, pressing down to compress the biscuits for a firm base. Place in the fridge to cool while you make the topping..

  5. Place a glass or heat proof bowl over a pan of boiling water, add the white chocolate cubes and stir until melted.

  6. In a large bowl mix together the cream cheese and mascarpone and slowly stir in the chocolate and ginger pieces.

  7. Pour the cream cheese mixture over the biscuit base and place in the fridge to set for a minimum of 2 hours.

  8. When set remove the cake carefully from the tin and dress how ever you like. Serve with cream for a true indulgent treat.
