Mackerel nicoise salad

Our take on the classic tuna nicoise, yet more delicious. A healthy salad topped with green beans and salty samphire work perfectly with the smoked mackerel. All accompanied by freshly boiled eggs, baby new potatoes and a delicious yoghurt dressing to tie everything together.

Ingredients

  • 200g green beans

  • 300g smoked mackerel fillets

  • 2 little gem lettuce roughly chopped

  • 100g samphire

  • 300g new potatoes, halved

  • 8 boiled eggs, shelled

  • Rustic bread of your choice

  • 2tbsp Mayonaise

  • 4tbsp yoghurt

  • 1 garlic clove, choped

  • 25g parmesan (+ extra for serving)

Method

  1. Add the potatoes to a pan of salted cold water and bring to the boil. Turn down to a simmer and cook for 15 minutes or until a knife pierces a potato easily.

  2. Meanwhile bring a separate pan of water to the boil add the green beans and samphire and simmer for 10 minutes.

  3. Place the mackerel in a frying pan over a medium to high heat and cook for 10 minutes to crisp up the skin and release the oils.

  4. Plate up by layering the lettuce topped with the green beans, samphire and egg halves. Sprinkle over a little parmesan.

  5. Lay the smoked mackerel on top of the salad, season with a little sea salt and black pepper and dollop on your yoghurt dressing.

  6. Serve with your choice of rustic bread.
