Mafe, African Peanut stew

Discover Africa with our authentic peanut stew. A delicious combination of creamy, nutty peanut butter with slow cooked beef, tomatoes, served with Cauliflower rice for a carb free alternative.

Ingredients

  • 500g Stewing beef

  • 1 tbsp plain flour

  • Salt and pepper

  • 1 onion, diced

  • 1x 400g tin tomatoes

  • 2 tbsp tomato puree

  • 1 Bay leaf

  • 125g natural peanut butter

  • 500ml vegetable stock

  • 1 green pepper, seeded and diced in 1 inch pieces

  • 1 red chilli + seeds (remove seeds if you don’t like it spicy)

  • 2 garlic cloves, finely sliced

  • Handful of chopped corriander

  • Cauliflower rice to serve

Method

  1. Flour the beef and season with salt and pepper.

  2. Place a deep frying pan or stovetop casserole dish over a medium to high heat. Add 1 tbsp olive oil followed by the diced onion. Cook for a few minutes until the onion starts to soften. Add in the beef and brown on all sides for 5-8 minutes. Add in the garlic and chili and cook for a further 2 minutes.

  3. Add the tomato puree and stir together. Add the tinned tomatoes, stock, bay leaf, pepper, and peanut butter. Stir well to combine. Bring to a boil, then reduce to a low heat or slow cook setting and leave to simmer for up to 5-6 hours with the lid off.

  4. Sprinkle with chopped corriander and serve with rice or cauliflower rice for a low-carb version.
