Mustard and maple glazed roast ham

The smell of this cooking alone is one thing and the taste another. Succulent ham with a sweet, sticky and mustard glaze makes this ham absolutely delicious.

Ingredients

  • 1 kg uncooked gammon joint

  • 1 tbsp wholegrain mustard

  • 2 tbsp white wine vinegar

  • 2 tbsp maple syrup

Method

  • Preheat the oven to 180°C. Score the fat in a criss cross pattern. Wrap in foil and place in the oven for 1 hour.

  • Mix all the glaze ingredients together (mustard, white wine vinegar and syrup)

  • After an hour, remove the ham from the oven. Unwrap and brush the glaze over the top of the meat.

  • Turn the oven up to 210°C and place the (uncovered) ham back in the oven for a further 30 minutes.

  • Remove from the oven and leave to rest for 10 minutes before carving.
