Open top chicken, mustard & caper sandwich

A super quick and easy lunch that you can whip up in a few minutes. The chicken goes perfectly with the the salty capers and peppery rocket, all combined together with a creamy mayonaise.

SERVES: 1 | PREP & COOK: 10 min

Ingredients

  • 1 tsp capers

  • 1 cooked chicken breast, shredded

  • 3 tbsp mayonaise

  • Pinch of pepper

  • Small handful of rocket

  • 1 tsp dijon mustard

  • 2 slices of rustic farmhouse bread

Method

  1. Mix together all of the ingredients (other than the bread).

  2. Toast the bread and spread with butter.

  3. Place the sandwich mix on top of each slice and sprinkle over the chopped parley and a little more pepper. Easy peasy!!!
