Healthier banana oat pancakes

Try these healthy banana oat pancakes. Deliciously sweet from the banana, topped with blueberries, low fat yoghurt and a drizzle of syrup if you’re being naughty

SERVES: 2 | PREP & COOK: 20 minutes

Ingredients

  • 125ml oat milk

  • 1 egg, separated

  • 1 small banana

  • 100g rolled oats

  • 2 tsp baking powder

  • Few drops vanilla extract

  • Olive oil

  • Low fat yogurt, blueberries and syrup to top.

Method

  1. Mix together all the ingredients in a food processor (leaving the egg whites separate) until a fine mixture forms.

  2. In a separate bowl wisk the egg whites until small peeks form. Fold into the oat mixture.

  3. Place a frying pan over a medium to high heat. Drizzle lightly with the olive oil. Place 4tbsp of mixture into the pan (if you have a big pan you maybe able to do 4 at a time). Leave for 2 minutes until bubbles start to form. Flip over and cook for a further minute.

  4. Serve up with a dollop of yoghurt a few blueberries and a drizzle of syrup if you like.
