Healthier banana oat pancakes
Try these healthy banana oat pancakes. Deliciously sweet from the banana, topped with blueberries, low fat yoghurt and a drizzle of syrup if you’re being naughty
SERVES: 2 | PREP & COOK: 20 minutes
Ingredients
125ml oat milk
1 egg, separated
1 small banana
100g rolled oats
2 tsp baking powder
Few drops vanilla extract
Olive oil
Low fat yogurt, blueberries and syrup to top.
Method
Mix together all the ingredients in a food processor (leaving the egg whites separate) until a fine mixture forms.
In a separate bowl wisk the egg whites until small peeks form. Fold into the oat mixture.
Place a frying pan over a medium to high heat. Drizzle lightly with the olive oil. Place 4tbsp of mixture into the pan (if you have a big pan you maybe able to do 4 at a time). Leave for 2 minutes until bubbles start to form. Flip over and cook for a further minute.
Serve up with a dollop of yoghurt a few blueberries and a drizzle of syrup if you like.
