Smoked salmon and spring veg
A fantastic healthy low carb dinner packed with green veg, oily fish and a delicious mustard dressing.
SERVES: 2 | PREP & COOK: 20 min
Ingredients
75g of feta
50g peas
1 bunch of asparagus, cut into 4 inch pieces
1 pack of tenderstem broccoli, cut into 4 inch pieces
1 avocado, stone removed and flesh scooped out.
2x smoked salmon fillets
Dressing
4 tbsp olive oil
2 tsp dijon mustard
1/2 lemon, juiced
Salt and pepper
Method
Put the broccoli, peas and asparagus in a large saucepan of water with a pinch of salt. Bring to the boil and simmer for 5-10 minutes.
Place the salmon in a frying pan over a medium to high heat and fry for 5 minutes, until warm through.
Meanwhile mix all the dressing ingredients together and season with salt and pepper.
Drain the green veg, add the avocado and toss together with the dressing and crumble over the feta. Season with salt and pepper.
Plate up the meddly of green veg and lay the salmon on top. Serve with sourdough bread if you like.
