Sausage and chorizo lentil pasta

Smokey sausage lentil pasta, slow cooked to perfection. Enjoy a delicious pasta ragu with less carbs and less guilt.

Ingredients

  • Olive oil

  • 400g garlic pork sausages (skinned removed)

  • 75g chorizo ring (skin removed and diced)

  • 1 onion, diced

  • 4 cloves of garlic (diced)

  • 2 tbsp tomato puree

  • 150g red wine

  • 2 tins chopped tomatoes

  • 2 tbsp low fat cream cheese

  • Handful of parsley, finely chopped

  • Good grating of parmesan cheese

Method

  1. Drizzle olive oil in a deep frying pan over a medium to high heat.

  2. Add the sausage and chorizo. Cook for 10 minutes, breaking up with a wooden spoon as it cooks.

  3. Add in the onion and fry for 5 minutes.

  4. Add in the garlic and tomato puree and cook for 2-3 minutes.

  5. Add the red wine to deglaze the pan.

  6. Add the tinned tomatoes and stir together.

  7. Turn the heat down to low, cover and cook for 1 hour.

  8. Meanwhile cook the pasta of your choice (We used lentil pasta to keep this lighter but normal pasta obviously works brilliantly too), acording to the packet.

  9. Add to the pasta to the sauce, along with two good scoops of pasta water and the cream cheese. Stir together well for a couple of minutes to warm the cream cheese and bring everything together.

  10. Serve across 4 bowls, sprinkle with chopped parsley and parmesan.
