Prosciutto, mozzarella and rocket salad with basil oil

Dig into a delicious salad, with a big ball of juicy mozzarella, salty prosciutto and garlic basil oil

Ingredients

Basil oil

  • 10g basil

  • 3 tbsp olive oil

  • 1 clove garlic

  • 1 tsp chilli flakes

Salad

  • 2 slices of prosciutto

  • 125g mozzarella

  • 30g rocket

Method

  1. Blitz all the basil oil ingredients in a food processor to make the basil dressing.

  2. Layer the rocket in a salad bowl. Tear the mozzarella and prosciutto into pieces and toss with the rocket.

  3. Drizzle over the basil oil and season with salt and pepper to taste.

As simple as that! …and trust me it’s delicious! The flavours pair so well together with the salty prosciutto and the juicy mozzarella. If you have any basil oil left, pop it in an air tight container and keep it in the fridge for up to 2- 3 days, to drizzle on your next salad or over some delicious prawns!!
