Pork chops with rhubarb & mixed grains

Rhubarb is a wonderful addition to a savoury meal. It works perfectly with the pork and balsamic, adding a sourness to the dish.

SERVES: 4 | PREP & COOK: 35 min

Ingredients

  • 400g rhubarb, cut into inch pieces

  • 2 red onion, cut into wedges

  • 5 garlic cloves, crushed with skin on

  • 2 tbsp balsamic vinegar

  • 8 pork loins

  • Olive oil

  • Large knob of butter

  • 4 sprigs of thyme

  • 500g mixed grains

  • 200ml chicken stock

  • Chopped parsley to serve

Method

  1. Heat the oven to 180°Fan C | 200°C | gas 6.

  2. In a roasting tin add the rhubarb, onion, balsamic, garlic and a drizzle of olive oil. Place in the oven for 20 minutes.

  3. In a large frying pan, melt the butter with the thyme. Add the pork (well seasoned with salt and pepper and cook on both sides for 2 minutes until nicely brown.

  4. Remove the roasting tray from the oven. Add the grains and chicken stock and lay the pork over the top.

  5. Pop back in the oven for 10 minutes or until cooked through

  6. Serve the pork loins on a bed of grains scattered with chopped parsley.
