Creamy mushrooms on toast
Delicate mushrooms with thyme and garlic in a sour cream sauce topped on a rustic brown farm loaf

Ingredients
500g mushrooms
Know of butter
1/2 tsp dried thyme
4 tbsp sour cream
1 garlic clove, finely chopped
Pinch of sea salt
Fresh parsley for serving
4 slices of rustic wholegrain bread
Method
Heat a large frying pan over a medium to high heat. Add the butter and melt.
Add the mushrooms and cook for 5 minutes. Add the garlic and thyme and cook for another 2 minutes.
Add the sour cream to the mushrooms and stir everything together with a pinch of salt.
Toast the bread and spread with butter.
Top the toast with the mushrooms and a sprinkle of parsley.
