Creamy mushrooms on toast

Delicate mushrooms with thyme and garlic in a sour cream sauce topped on a rustic brown farm loaf

Ingredients

  • 500g mushrooms

  • Know of butter

  • 1/2 tsp dried thyme

  • 4 tbsp sour cream

  • 1 garlic clove, finely chopped

  • Pinch of sea salt

  • Fresh parsley for serving

  • 4 slices of rustic wholegrain bread

Method

  1. Heat a large frying pan over a medium to high heat. Add the butter and melt.

  2. Add the mushrooms and cook for 5 minutes. Add the garlic and thyme and cook for another 2 minutes.

  3. Add the sour cream to the mushrooms and stir everything together with a pinch of salt.

  4. Toast the bread and spread with butter.

  5. Top the toast with the mushrooms and a sprinkle of parsley.
