Spring veg and red pepper humous

This is a super speedy dinner or side dish for a picnic, if you have more time you might like to make the humous but for speed, shop bought does the trick.

SERVES: 1 | PREP & COOK: 15 minutes

Ingredients

  • 160g mix of green beans, tenderstem brocoli and mangetout (or your favourite choice of veg)

  • 75g edamame beans

  • 1 garlic clove, chopped

  • Drizzle of olive oil

  • 1/2 small red chilli, deseeded & chopped

  • Juice half a lemon

  • 75g red pepper humous

  • Salt and pepper

  • Sourdough bread to serve (optional)

Method

  1. Put the green veg and beans in a saucepan. Cover with water add a pinch of salt and bring to the boil. Reduce to a simmer and cook for 10 minutes.

  2. Meanwhile, choose a flat plate, spread with the red pepper humous.

  3. Once the veg is done, drain and place back on the hob. Drizzle with olive oil, add the garlic, lemon, chilli and a pinch of salt. Cook for a further 2-3 minutes.

  4. Serve over the humous and enjoy with fresh bread. We like to add a little pot of olive oil and balsamic for dipping.
