Spring veg and red pepper humous
This is a super speedy dinner or side dish for a picnic, if you have more time you might like to make the humous but for speed, shop bought does the trick.
SERVES: 1 | PREP & COOK: 15 minutes
Ingredients
160g mix of green beans, tenderstem brocoli and mangetout (or your favourite choice of veg)
75g edamame beans
1 garlic clove, chopped
Drizzle of olive oil
1/2 small red chilli, deseeded & chopped
Juice half a lemon
75g red pepper humous
Salt and pepper
Sourdough bread to serve (optional)
Method
Put the green veg and beans in a saucepan. Cover with water add a pinch of salt and bring to the boil. Reduce to a simmer and cook for 10 minutes.
Meanwhile, choose a flat plate, spread with the red pepper humous.
Once the veg is done, drain and place back on the hob. Drizzle with olive oil, add the garlic, lemon, chilli and a pinch of salt. Cook for a further 2-3 minutes.
Serve over the humous and enjoy with fresh bread. We like to add a little pot of olive oil and balsamic for dipping.
