Halloumi pesto green salad

Quick, simple and fresh green salad, made of lettuce, cucumber, herbs and avocado drizzled with a basil and parsley pesto, topped with salty halloumi.

Ingredients

  • 2 x 250g pack halloumi, sliced into 2cm pieces

Salad

  • 2 cucumbers, diced

  • 2 little gem lettuce

  • 2 avocados

  • Juice of 1 lemon

  • 1 tbsp olive oil

Pesto

  • 2 tbsp walnuts

  • 2 tbsp parmesan

  • Pinch salt and pepper

  • Small bunch of basil and parsley, leaves only

  • 100ml olive oil

  • 1 garlic clove, peeled

  • Juice of 1 lemon

Method

  1. Mix all of the salad ingredients in a large bowl together.

  2. To make the pesto, put all the pesto ingredients in a blender and blitz until smooth.

  3. Heat a large frying pan over a medium to high heat. Place the sliced halloumi in the pan and cook for 3 minutes each side or until nicely charred.

  4. Serve the salad drizzled with the pesto and topped with the halloumi.
