Chocolate and coffee banana bread

Turn the traditional banana bread into a more indulgent treat by adding coffee and chocolate!!! A fantastic way to use up those left over bananas and whip up a delicious tea time treat.

PREP & COOK: 1 hr

Ingredients

  • 3 over ripe bananas

  • 100g caster sugar

  • 2 eggs

  • 1 tbsp instant coffee granuals.

  • 1 tbsp of nutmeg

  • Pinch of salt

  • 80g butter melted, plus extra for greasing

  • 220g self raising flour plus 1 tbsp baking powder

  • 100g chocolate broken into small pieces

Method

  1. Preheat the oven to 190C/170C Fan/Gas 5. Line a loaf tin with baking paper on the bottom and grease the sides with butter.

  2. Place the bananas, sugar, butter, salt and eggs into an electric mixing bowl or large bowl if mixing by hand and beat until smooth.

  3. Melt the butter in a small pan over a low to medium heat, add to the bowl and beat in.

  4. Fold in the nutmeg, coffee, flour and baking powder until the batter is smooth and light. Fold in the chocolate.

  5. Spoon the mixture into the pre lined loaf tin and place in the oven. Bake for 50 minutes.

  6. Remove from the oven and leave to cool before turning out.
